Many people prefer hot rice. If you also enjoy eating rice, we've brought you a new dish: Mexican rice. A mixture of corn, bell peppers, and tomato puree makes it incredibly tasty. If you're looking for a more flavorful dinner with your family, try this. The aroma of oregano adds to the flavor. You can also make it for special guests. This is a great option for those who are tired of fried, vegetable, and cumin rice. If you follow the recipe here step by step, you'll have no problem making this dish.
   Ingredients
Basmati rice – 2 bowls
Red bell pepper – 1/2 part
Yellow bell pepper – 1/2 part
Green bell pepper – 1/2 part   
Sweet corn – 1 cup
Red kidney beans – 1 cup
Onions – 2 chopped
Tomato puree – 1 1/2 cups
Oregano – 2 teaspoons
Tomato sauce – 3 tablespoons
Green chilies – 2 finely chopped
Garlic – 4 finely chopped
Olive oil – 3 tablespoons
Green onion – 1 head
Coriander leaves – 1/2 cup
Salt – to taste
Recipe
First, soak the rice in water for half an hour. Cut the onion and bell pepper into small pieces.
Heat oil in a large pot and add the garlic and green chilies. When the garlic turns red, add the onion and sauté over low heat until the onion softens.
   
- When the onions are fried, add the soaked rice and increase the heat to high, and fry the rice for 2 minutes.
- Then add the three types of bell peppers, tomato puree, and sauce, and fry for 5 minutes. Now add oregano, sweet corn, and boiled kidney beans to the rice and add water as needed.
- Cook the rice covered and stir occasionally to prevent the rice from burning.
- When the rice is cooked, turn off the heat and add chopped onion leaves and coriander leaves to the Mexican rice.
- This rice can also be cooked in refined oil instead of olive oil. To enjoy its flavor, serve immediately after cooking.
